Cardamom consist of dried ripe fruits of Elettaria cardamomum (Maton) var. minusculus belonging to family Zingiberaceae. Cardamom is also known as “Queen of Spices” due to its strong pleasant aroma and taste. Cardamom contains mostly aromatic continents such as Cineole, alpha-pinene, sabinene, Myrcene, alpha-terpinyl acetate, alpha terpineol, limonene. It is used as carminative, stimulant and flavouring agent.
