Makhana is a traditional Indian super-snack made from the popped seeds of the water lily/lotus grown in shallow ponds. Farmers harvest the seed pods, sun-dry them, and the hard black seeds are then roasted and popped at controlled heat to produce the light, white kernels known locally as phool makhana. This process keeps the product naturally vegetarian, fasting-friendly, and low in fat.
